Our Peanut will be two!!!

Wednesday is a big day for us.  The Peanut will be Two years old.  She wants a “Duck” party.  We will all celebrate on Saturday and Grammie made Duck Cookies for the party.

I wanted to use Fondant for the icing but at $20 for one container (and I needed 2 for 36 cookies), I opted for some good ole confectionery sugar glaze.  This is a prototype.  Xan said they are “Dynamite Cookies”.  I used my old standard sugar cookie recipe.

1/2 cup butter, 1 egg, 3/4 cup of sugar.    Cream the butter and sugar.  Add the egg

1 Tbs milk, 1 Tbs pure orange extract.  Mix together and add to the above mixture.

1/4 tsp salt, 1/4 tsp baking powder, 1 1/4 cups flour.  Sift together and add to cookie mixture  Mix well and turn out onto plastic wrap.  Chill dough thoroughly.  Add more flour if necessary to roll out.  Cut, place on cookie sheet and bake at 400 degrees for 5 to 7 minutes.

The icing is a little more difficult to write down.  I placed some confectionery sugar in a bowl, added one drop of yellow food coloring and a drop of  orange extract and mixed well.  I added milk drop by drop until the icing was fairly thick but still spreadable.  I only iced 3 cookies because this was a test.  Like I said, Xan is my “cookie tester” and she loves the cookies.  I hope the Peanut and her cousins do too.
