Cherry Almond Quick Bread

This recipe is really quick and easy.  First, I thaw out my cherries and drain them.

You will need:

3 cups all purpose flour                         1 1/2 cups of sugar                  3 tsp baking powder         3/4 tsp salt        1 cup (or so) Bing Cherries (fresh or frozen)    1 1/4 cups of milk       3 eggs        1 1/2 sticks melted butter   2 tsp. almond extract.

Mix all the dry ingredients together in a large bowl.  Add the cherries and mix well to coat them.  This ensures that the cherries will not drop to the bottom of the cake while baking.  Mix all the wet ingredients together and then combine the two mixtures.  Spray your loaf pan with butter flavored spray and fill the pan with the batter.  This cake does not rise very high.  Bake at 325 degrees for one hour or until a toothpick inserted in the center comes out clean.  If you are using a metal pan, you have to cook this bread at 350 degrees.

As you can see, I like to make individual breads as well.  They freeze well and are great when unexpected friends or family drop in for Tea.  I love to make these individual breads during the summer when fruit is at its peak.  You can use any fruit you like.  I have used blueberries, peaches, strawberries, pears, blackberries, apples and raspberries.   They are all delicious and bake well in ramekins.  I hope you enjoy!!!!!
