Hide veggies in a favorite food.

When I make macaroni and cheese, I make it from scratch.  It is really very easy to do and I always add peas and carrots from a can.  Yes, canned peas and carrots because the carrots are diced small, they are about the same size as the peas and they hide well in the mac and cheese casserole.  Sometimes I add sliced tomatoes on top of the casserole to make it look pretty and get the children use to different ingredients in their favorite food.  I also like to let them help me cook, once they get use to having veggies in their favorite foods.  I did have one child try to pick out all the peas and carrots from the mac and cheese but I told her there was no dessert until the veggies were gone.  I had to give her a bith more “sauce” on the veggies and then she ate them.  Now, happily, she eats all her veggies.

Another “trick” I have tried is to hide veggies in meatloaf.  I would use my food processor to grate, then chop carrots, celery, and onions.  and add the veggies to the meat along with eggs and seasoned breadcrumbs.  Lately I have found the Knoor springtime vegetable soup mix and I have added this dry soup mix to the meatloaf.  If I use the dry soup mix, I do not add any salt since the soup mix contains salt.  This soup mix has a nice verity of veggies and gives a nice flavor to the meatloaf.  The grandchildren love this meatloaf and are non the wiser.
