Chicken Stuffed Peppers

Xan has decided to eat healthier this year.  She loves stuffed peppers and wanted to make them with boneless, skinless chicken breasts instead of chopped beef.  I must admit this recipe is very good.  Here is how we made them.

We partially froze 3 chicken breasts.  While still three quarters frozen, we took them and placed them into the bowl of our food processor with the knife blade attached.  We then pulsed them about 8 times to chop the chicken into small pieces.

We placed the chicken into a large bowl and added freshly ground pepper, 3 minced garlic cloves, dried sweet basil, dried parsley flakes, dehydrated onion flakes, and dried Oregano.  We had some cooked brown rice left over from the night before and added that to the mixture.  After mixing everything very well, we cut the green peppers in half lengthwise and cleaned out the seeds.  We then stuffed each half of the green pepper and put them into a large baking pan.  Xan and I make large quantities of a recipe so we can freeze some of the food for later use.  We made 6 whole peppers (12 halves) this time.

After all the peppers were stuffed and placed into a the large baking pan we made a sauce for them.  We added 2 cans of Hunts tomato sauce, dried sweet basil, dried oregano, freshly ground pepper, and 2 minced garlic cloves to the tomato sauce.  We poured this over the stuffed peppers, covered the pan with aluminum foil and placed it into a 350 degree oven for about an hour.   The peppers we used were large and we each ate one half of a pepper with some steamed veggies.  The rest we froze.  We froze them 2 halves to a package.  Tonight we will have one of the frozen dinners.  Xan has taken a package out of the freezer this morning to defrost.  This evening she will put them into the microwave and heat them for about 7 minutes.  This all depends on the wattage of your microwave.  We will serve them with steamed mixed veggies.

As you can see, we do not measure our spices and herbs.  This has to be to taste.  You will also note that we do not use salt in our recipes.  Please feel free to modify this for your families taste buds.  Xan and I hope you enjoy this recipe.
